Layered in a 9×12 dish only 6 ingredients:
3-4 medium zucchini (squash, whatever) cut in 14″ slices, and halved
jalapenos (as many as you want, but add the juice)
stewed tomatoes (big can, juice too)
SLIVERED (not sliced) almonds (a pack or two)
cheddar cheese over the top (or any kind you like that melts)
Bake at 350ish till the zucchini is al dente. (roughly 25 minutes)
Served over white rice (brown’s good too).
It’s best the next day, but it never lasts that long!
