Tabbouleh

1 cup medium bulgur and 2 cups boiling water in a large bowl..Cover and let sit 30 minutes. Drain. Then add –

4 large finely chopped tomatoes
2 cups finely chopped parsley springs
1 cup finely chopped fresh mint
1 cup finely chopped purslane
2 finely chopped medium onions
Stir in (to taste) salt and black pepper
1/3 cup lemon juice
1/3 cup olive oil

Serve at room temperature.
