Sautéed Okra with Roasted Peppers

(serves 4-6)

1 pound okra
heat a heavy skillet – add 1.5 tablespoons olive oil
when hot add one sliced onion
cook and stir for 4 minutes.
Add the sliced okra and cook 3-5 minutes.
Stir in 2 cloves minced garlic
2 sliced peppers
salt to taste

Cook and stir about 2 minutes more then sprinkle with parsley and serve.
