Radish Salad

1C Radishes
1/4C White or Rice Vinegar
1tsp Salt
Olive Oil
Freshly Ground Pepper

1. Slice radishes, marinate in vinegar & salt for 3 hrs. Drain.
2. Mix radishes with oilve oil & pepper to taste.
3. Optional garnishes: TBSP capers, hot pepper strips.
